I am not terribly fond of fish, a well known fact among my family and friends. I also know of the many health benefits that can be obtained from eating fish, especially the wild caught remote location fish. So I picked up some canned salmon that fit all the criteria and created this! It allows for me to get a serving of fish in and still enjoy it (without mayonaise), especially when topped with my favorite tzatiki sauce
2 cans wild caught salmon
3 eggs
2 T. almond flour
2 T. coconut flour
1 T. lemon juice
1/2 t. oregano
1 t. dry dill
salt & pepper to taste
almond flour for sprinkling (1 T.)
Combine these ingredients together and form by hand into patties, I ended up with about 8 patties but this varies depending on the size you want. I found it easiest to grab a ball of the mix and place it on a piece of wax paper sprinkled with almond flour. Heat up a fry pan with a little bit of oil and when its at a good medium heat fry these patties up, browning lightly on each side. 3-5 minutes on each side, do be careful not to crowd the pan because they are delicate and need care when turning them over. I topped them with tzatiki or you can make up some tarter from primal ingredients or for purists out there just squeeze on fresh lemon and enjoy!
