Weekday Bacon

Crispy Bacon fresh from the oven

I love bacon, a lot! So when I found a way of eating that allows for bacon and natural fats and bacon and healthy high quality foods and bacon, well I was all in! Unfortunately like you I am busy, so during a free evening or weekend afternoon I will cook up a tray of bacon for use during the week. It’s great because you can putter around the kitchen and get this done in a descent amount of time, with no mess.

1-2 pkgs bacon

a cookie tray (with sides)

Lay the bacon slices on the tray close together but not overlapping, place in a 350 degree oven and let them bake. After 10 minutes take them out and flip them with a fork, if you don’t they will stick to the tray (then things will get messy). After that check them every 10 minutes or so and stop when they are close to how you like them but not quite there. Personally I am in the crispy camp but I know some out there like their bacon soft…or tender…um chewy….? You know who you are, but never burnt so keep them peepers open and use timers if you are easily distracted. It easily reheats in the microwave in 30 seconds or you can throw them in your fry pan as you finish up your eggs. Also great to chop up and throw on a salad, again a quick microwave and you have hot bacon bits!

This would be a great time to multi-task and make up some Bacon Wrapped Cheese Stuffed Dates for some appetizers or late night cravings. Oh and don’t forget to save your bacon grease for cooking with, grandma definitely had that one right!
