Pizza Bites/Pizza Pockets

One thing I love is pizza, I mean it, pizza is the best food in the world!! I used to love having the little pizza bites that are full of gluten and chemicals … and other stuff I don’t even want to know about nor can I pronounce. So I thought up these little cuties, pretty easy to do (the kids can help) and great for small snacks, lunches or party appetizers.

Salami

Pepperoni

Mushrooms

Chard (spinach or kale, some leafy green that is healthy)

EZ Spaghetti Sauce

Cheese (mozzarella and cheddar) shredded fine

Amounts really will vary depending on how much you want to make, it doesn’t take many mushrooms or chard but you also need to buy most of the these ingredients in bundles or packages so purchase accordingly.

Chop mushrooms and chard into VERY small pieces, you want the mushrooms to be smaller than a pea in size, the chard or leafy green should be chopped fine.

For pizza bites: Use a mini muffin pan, ‘squish’ or press one piece of salami into the muffin tin to line it, follow this with two pieces of pepperoni slightly overlapped and pressed in over the salami. You want to create a cup with the meat so that it can hold the other ingredients, often if the meats are warmer it will press in easier. Now take the mushrooms and chard and put a spoonful in the meat cup you have created. (meat cup…don’t hear that often) Over this put about one teaspoon (not much is needed) of spaghetti sauce, top with a small amount of finely shredded cheese. Bake at 425 for 10-15 minutes, the edges of the meat should be darkened and the cheese brown and bubbly. If they are not done enough they won’t hold up well on a plate but be sure to watch for burning.

For pizza pockets: Use a regular sized muffin tin for these. Follow the same instructions as pizza bites but increase the amounts. You will need two salami slices and 4 pepperoni slices per normal sized muffin. Cooking time will be 12-18 minutes.

These reheat well so the kids love them as an option for lunch! I love them as a late night craving buster.
