Green Eggs and Ham

I will just apologize now for making you think of the story, I am sure you will have Sam I am, Sam I am, running through you head all day now. I have been searching for good ‘to-go’ breakfast ideas and things that are easier for the kids to handle in the mornings. I think this fits the bill nicely, there is plenty of protein with some vegetable and it reheats easily and can be eaten without a fork and knife (although feel free to use them). You do not like them. SO you say. Try them! Try them! And you may. Try them and you may I say.

1 slice Ham for each ‘muffin’ (I used black forest ham but whatever you pick up make sure the slices aren’t overly thick)

8 eggs

2 handfuls spinach (kale, chard or other dark leafy greens will work)

1/4 cup water

Salt to taste

Pepper to taste

Pinch of chili powder (or more you decide if you want to season it or spice it up!)

Optional: Parmesan cheese, 1 t. per muffin tin

Line a regular sized muffin tin with ham in each opening, pressing it into the tin to form a cup. Take the eggs, spinach and seasoning and blend them with water in a blender or food processor. Take the egg mixture and pour it into the ham cups, dividing it between all the cups. If desired add the cheese to the top of each ham cup. Place in a 350 degree oven for 15 minutes, take out and cool. Say! I like green eggs and ham! I do!! I like them, Sam-I-am! And I would eat them in a boat! And I would eat them with a goat… Well you get the idea.
